Ingredients:

For the rice:

2 cups basmati rice

4 cups water

1 bay leaf

2-3 green cardamom pods

2-3 cloves

Salt to taste


For the chicken:

1 kg chicken, cut into pieces

1 cup plain yogurt

1 tablespoon ginger-garlic paste

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon garam masala

Salt to taste


For the biryani:

3 large onions, thinly sliced

1/2 cup cooking oil or ghee

1 cup chopped tomatoes

1/2 cup chopped cilantro (coriander leaves)

1/2 cup chopped mint leaves

1/2 teaspoon saffron strands (soaked in 2 tablespoons warm milk)

Fried onions (optional, for garnish)


Instructions:

Till the water runs clear, rinse the basmati rice under cold water. For almost half an hour, soak the rice in water.


In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice, bay leaf, cardamom pods, cloves, and salt. Cook until the rice is 70-80% cooked. Drain the rice and set aside.


Combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt in a bowl to marinate the chicken. Give it at least half an hour to marinate.


Heat ghee or oil in a different pan over medium heat. When the onions are golden brown, add the slices. Take off half the cooked onions to use at a later time.


Combine the remaining onions in the pan with the marinated chicken. Cook the chicken until it's thoroughly done and browned.


Add chopped tomatoes, cilantro, and mint leaves to the chicken. Cook for a few minutes until the tomatoes are soft.


In a large pot or biryani pot, layer half of the partially cooked rice, followed by the chicken mixture. Top it with the remaining rice.


Drizzle the saffron-soaked milk over the rice and sprinkle the reserved fried onions on top.


Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes or until the rice is fully cooked and the flavors are well combined.


Using a fork, gently fluff the biryani, combining the layers if preferred. Serve hot with a side salad or raita.
